Why a home grater isn't enough
Home graters burn out after a few sessions of parmesan or pecorino. A professional grater has a ventilated motor, a hardened roller and a steel base: it grinds kilos of cheese per minute without struggling.
Roller types
- Stainless punched roller: fine grated cheese, great for pasta and risottos.
- Aluminium roller: cheap, good for softer aged pecorino.
- Cast iron roller: for very hard cheeses like Grana and Parmigiano DOP.

Recommended models
For a trattoria or a pizzeria, the GD double single-phase grater is the workhorse: tough, easy to clean, aluminium body. For smaller jobs where space is tight, the GMR Mignon is compact but surprisingly effective.
Cleaning and maintenance
After every use remove the roller and wash it in hot water. Don't put aluminium parts in the dishwasher — harsh detergents dull the surface. Always dry the roller before reinstalling to avoid rust.
Safety
A professional grater must have a safety microswitch on the pusher: if the pusher is raised, the motor won't start. Always test that switch before use.
