On twin-wheel slicer sharpeners the medium-grit stone performs the actual sharpening pass on the blade edge, while the second (fine-grit) stone is used for the final deburring pass. Replace the emery wheel when it is worn, glazed, or no longer sharpens evenly, and whenever the blade itself is replaced.
