This is the abrasive stone fitted to the blade-sharpening assembly: rotating against the edge of the circular blade, it restores the cutting edge and, in the final stage, removes the burr left by sharpening, keeping slices clean and even.

Always check the dimensions of your grinding wheel (diameter, thickness and bore diameter) before purchasing, as wheels are not interchangeable between sharpeners of different brands and sizes.
When to replace it: a worn, glazed, chipped or undersized wheel no longer sharpens properly — the blade stays dull, heats up and produces uneven or burred slices. That is when the grinding wheel should be replaced. If the sharpener carries a pair of stones (coarse grit for sharpening and fine grit for deburring), we recommend replacing them together to maintain an even edge.
