SIRMAN ECCENTRIC CAM

Cams, eccentrics, blade guards and graduated knobs for all Sirman slicer models — the components that adjust cutting thickness and protect the blade area.

Eccentric: standard (e.g. mod. CE, Mirra) or variable-pitch conical (mod. Leonardo Evo, Galileo Evo, with roller) for finer thickness adjustment.

Blade guard: plexiglass (mod. Agata 250) or stainless steel (mod. Mirra 220/250/300, Mainz 250V) between the blade and the pusher plate.

Graduated knob: with pin (e.g. Ø12mm) or numbered aluminium cone (mod. Leonardo 350-385).

Other components: flat pulley (mod. Agata 300).

Frequently asked questions

What's the difference between a plexiglass and a stainless steel blade guard?
Plexiglass keeps the cut visible, stainless steel is more resistant; the right choice depends on your slicer's original model.

When is the conical eccentric needed instead of the standard one?
On Leonardo Evo and Galileo Evo models, for finer, more gradual thickness adjustment.
