The punched roller is the heart of the cheese grater: rotating against the grid, it shreds the cheese or bread thanks to the punching (the small holes on its surface).

Available materials: stainless steel (more corrosion-resistant, suited to heavy use), aluminium (lighter) and cast iron — the choice depends on your machine's original model, they're not freely interchangeable.

With or without flanges: flanges are the supports at both ends of the roller that centre it on the rotation shaft; some models have them built in, others need them separately.

How to measure the correct part: every roller is identified by two measurements — diameter x length (for example 64x134, 69x145) — both are needed: a roller with the same diameter but a different length won't fit the grater body.

What's the difference between stainless steel, aluminium and cast iron rollers?
They differ in weight and resistance to wear/corrosion; the correct material is the original one for your machine, usually indicated by the manufacturer.

How do I measure the roller I'm replacing?
Measure diameter and length with a caliper: these are the two measurements that determine compatibility, together with the presence or absence of flanges.
