How to choose the right blade

Replacing a blade takes a few measurements, usually stamped on the old blade or inside the blade cover:

  • Outer diameter (e.g. 250, 300, 350 mm): the main figure.
  • Centre bore (typically 40-62 mm) and number of drive holes (3 or 4).
  • Material: C45 (carbon steel, economical) or 100Cr6 (chromed, harder, holds the edge longer).
  • Edge/coating: standard plain edge, or Teflon-coated for fatty cured meats, soft cheeses and sticky products.

How do I know my blade diameter? It is usually shown in the slicer's model code (e.g. "250" = 250 mm blade) or measured across the outer diameter of the old blade.
C45 or 100Cr6? 100Cr6 holds its edge longer and is recommended for intensive use; C45 is a great economical choice for home use.

Materials

C45 is cheaper and suited to non-intensive use; 100CR6 is harder and lasts longer, ideal for butchers, delis and restaurants. Teflon-coated blades for cheese and vegetables are also available. All blades come pre-sharpened.
