The thermostat controls the temperature of professional ovens and cooktops, through a bulb in contact with the heat source connected by a capillary tube to the control body.

Adjustable thermostat: lets you set the working temperature within a range (e.g. 0-90°C, 40-120°C, 60-320°C), available single or three-phase.

Safety thermostat: trips at a fixed threshold (e.g. 230°C, 350°C) to cut heating in case the adjustable thermostat fails, often with manual reset — unlike the adjustable type, it should not be used as a working control, only as a protection.
