The o-ring is in direct contact with fats and with the machine's continuous pressure cycles: with use it tends to harden, crack or lose elasticity, compromising the seal and allowing product to seep into the mechanical parts. It should be replaced when leaks or a drop in sealing performance are noticed during stuffing, in order to maintain hygiene and machine efficiency.
