The ABO mod. 8 knife holder pin (ref. ABOTRI0009) is the threaded pin onto which the cross knife is mounted in the grinding assembly of an ABO-brand size 8 meat mincer. It works together with the knife and the perforated plate: it holds the knife in position and keeps it pressed against the plate, ensuring a clean cut of the meat during grinding. It is a wear part under continuous load, since it transmits the assembly's torque and maintains the clamping of the knife/plate unit.
Replace it when wear appears that compromises cutting or the safety of the assembly: stripped or damaged thread (the ring nut no longer tightens correctly), bent pin, play in the coupling, or an out-of-round knife seat. A worn pin makes the knife work poorly, crushing the meat instead of cutting it, and can let the grinding unit loosen.
