The sharpener is the unit with the two grinding wheels (sharpening stone and honing/deburring stone) that restores the blade's edge directly on the machine: you release the locking knob, lift the sharpener and rotate it 180° so the blade sits between the two wheels, then run the sharpening wheel (darker) first, followed by the honing wheel (lighter) to finish the edge.
It should be replaced when the grinding wheels are worn, when the sharpener no longer engages the blade properly, or when the edge remains uneven or poorly cutting even after sharpening.
