It is the component fitted inside the granita machine's tank that, rotating in contact with the walls of the cylinder-evaporator, continuously scrapes off the ice crystals that form during refrigeration, preventing lumps and keeping the product smooth and creamy. The clearance between the scraper and the evaporator directly affects the granita's texture (crystal/grain size).
It should be replaced when worn or deformed, or when the granita comes out lumpy, grainy or not creamy even though the motor is working correctly.
