On GBG granita machine taps, dispensing is triggered by the external lever: moving the lever shifts the internal piston, which opens the passage and lets the product flow into the cup; pin, spring and seal complete the assembly, ensuring a tight seal and returning the tap to the closed position when the lever is released. The piston is therefore the central component of the tap's open/close mechanism.
