J7 ex Z7 shredding disc for Fimar vegetable cutters

The J7 (formerly Z7) shredding disc is a replacement disc for Fimar vegetable cutters. It processes vegetables and mozzarella into strands (shredding / coarse julienne), a function widely used in pizzerias and food service to produce ready-to-use shredded mozzarella.

The disc sits in the machine's feed bowl and, as it rotates, pushes the product against the cutting grid: the teeth score and separate the food into regular strips. The 7 in the code indicates the 7 mm cut size. The product code changed over time: the current code is J7, while the former one was Z7 (same part).

This is a wear component: over time the cutting edges lose their sharpness or become deformed, the cut turns uneven and the product gets crushed rather than scored. Replacing the disc restores a clean, precise cut.
