It transmits motion from the electric motor to the blade assembly: it is the component that allows the blade to rotate during slicing. With use, the belt tends to wear, stretch or crack, causing typical symptoms such as the blade slowing down, slipping under load, unusual noise or, in more severe cases, the blade stopping to rotate even though the motor is running.
Periodically replacing the belt restores correct power transmission and the machine's original slicing speed.
