The gauge plate is the disc/shield positioned flush with the blade that sets the slicing thickness while also acting as a guard for the blade edge during use. By turning the adjustment knob, the gauge plate moves closer to or further from the blade, determining the slice thickness (from paper-thin to thicker cuts) and keeping the operator safe while slicing.
With prolonged use the gauge plate can wear, deform or develop play in its sliding mechanism, affecting thickness accuracy and cutting safety. In these cases it must be replaced with a compatible spare part for the HL200 model, to keep the slicer's cutting performance and safety intact.
