C45 is a carbon steel (not stainless): it holds a good edge but must be sharpened regularly and protected with a thin film of food-grade oil against oxidation. Check the dimensions — especially the 40 mm centre hole with 3 holes — before purchasing. Fitting and sharpening should be carried out by technical personnel.
