The carriage assembly is the sliding structure that supports the food plate and allows it to move under the blade during cutting. Thanks to the BLC system, the plate and its support can be removed for easy access and thorough sanitation of the area underneath; for safety, disassembly is only possible with the slice thickness dial set to zero, with the blade fully guarded. This is the part to replace when the carriage shows excessive play, uneven sliding, or worn guides, all of which compromise cutting precision and safety.
