The grinding stone is the abrasive wheel fitted on the slicer's built-in sharpener: rotating in contact with the blade edge, it restores its cutting edge. The coarse grain is used for actual sharpening, i.e. removing material from the edge when the blade is dull, blunt or has small nicks, while the fine grain is used in the following honing pass. Replace it when it is worn down, chipped, glazed on the surface, or when it no longer removes material effectively during sharpening.
