The sharpening stone (abrasive grinding wheel) is the component that sharpens the blade edge on ABO slicers and on all compatible sharpeners using these dimensions. Mounted on the sharpener assembly, it rotates in contact with the cutting edge and restores its cutting geometry, removing edge wear.

When to replace it: the wheel should be changed when sharpening is no longer effective, i.e. when slices come out uneven or streaked, or when the stone looks worn, glazed or chipped. In dual-wheel sharpeners the coarse-grit stone performs the initial sharpening of the blade, while the fine-grit stone removes the burr and finishes the edge. It is good practice to replace the stones whenever the blade is changed, to obtain uniform sharpening. For correct sharpening, the inner edge of the stone must line up with the edge of the blade.
