The eccentric cam with CE carriage lock for Essedue slicers is the component that adjusts the slice thickness by acting on the stop of the gauge plate/carriage: as the knob is turned, the eccentric moves the product stop plate forwards or backwards relative to the blade edge. The CE version incorporates the carriage lock, the safety device required by CE regulations that prevents cutting when the knob is not in the closed (zero) position, protecting the operator.
