It takes its name from the graduated dial, shaped like a clock face, which lets you set the cutting thickness precisely by turning the knob to the desired value and check it at a glance while slicing.
Genuine Sirman spare part, ref. AGWSSIRAFF0393, compatible with the following models:

Replacement is needed when the knob is broken or cracked, the graduated dial is no longer readable or has faded, or the thickness setting becomes imprecise and the knob no longer holds its position during slicing, risking uneven slices.
