The graduated knob is the control that adjusts the slicing thickness by acting on the slicer's eccentric disc: turning it moves the food-carrying plate closer to or further from the blade, from minimum (shaving) to maximum thickness.
The engagement pin has a diameter of 12 mm. When the knob's engagement hole wears and widens, play develops between knob and pin and thickness adjustment becomes imprecise: in this case the knob needs to be replaced.
