The clock-type knob is the graduated dial that lets you fine-tune the slicing thickness on your meat slicer: turning it clockwise or counter-clockwise moves the blade carriage closer to or further from the blade, so you can go from paper-thin to thicker slices with a single adjustment, much like setting the hands on a clock face.
This spare part is specific to the Essedue model 220 slicer (code ESSAFF0043) and is not interchangeable with the clock knobs fitted to other models in the same range, such as the 250 or the 275, which use a different mount and dial calibration.
Replacement becomes necessary when the graduated dial is no longer readable or is chipped, when the knob spins freely without engaging the adjustment mechanism, or when excessive play makes it impossible to hold a constant, repeatable slicing thickness. A compatible mod. 220 Essedue clock knob restores the original adjustment precision without needing to work on any other part of the slicer.
