This is the graduated "clock" knob that controls the slice thickness adjustment: turning it moves the gauge plate relative to the blade, and the graduated scale on the dial lets you set thin or thick slices repeatably, returning to the same value every time. Plastic body, replacement part specific to the Dual model of the Kolossal slicer range.

When to replace it: cracked or chipped knob, stripped inner coupling that spins without moving the gauge plate, unreadable graduated scale or pointer no longer matching the actual slice thickness. With a sound knob the adjustment is precise again and the zero closing of the gauge plate, important for safety during cleaning and sharpening, is reliable once more.
