The spiral is the rotating stainless steel tool that works the dough by turning inside the bowl, which is also stainless steel and rotates more slowly: on the Hercules 20 model the bowl has a 21-litre capacity, mixing up to 17 kg of dough, suited to pizzerias and bakeries with medium production needs. The dough breaker and bowl are also stainless steel, while the lid is polycarbonate with an opening for adding ingredients while the machine is running.
