The spiral is the rotating stainless steel tool that turns inside the bowl during mixing, working the dough against the bowl itself (which rotates more slowly in the opposite direction): on the Hercules 30/40 models the bowl turns at 10 rpm while the spiral turns at 85 rpm, giving a well-developed, uniform dough even under intensive pizzeria and bakery use. The Hercules 30 has a 32-litre bowl (up to 25 kg of dough), while the Hercules 40 has a larger 41-litre bowl (up to 35 kg of dough).

Replace the spiral when it is bent, deformed, rusted, or when the dough is mixed unevenly: a worn or off-centre tool prevents proper gluten development and lengthens mixing times.
