The knife pin is the part of the meat mincer's mincing assembly that mounts and holds the cross-blade (the rotating four-edged knife) in position against the perforated plate. When the locking ring is tightened, the worm screw pushes the meat while the knife, held on the pin, rotates flush against the plate and cuts the product. A sound pin ensures correct centring, proper clearance and a clean cut.

Replacement part suitable for AMB brand meat mincers, model (size) 12. As a component under continuous mechanical stress, it should be replaced when the thread is stripped, the pin is bent or shows excessive play: in these cases the knife no longer works flush against the plate, cutting and yield deteriorate, and wear on the knife and plate increases.
