Knife-holder pin for size-8 (TS8) meat mincer, Fama/Fimar type. This is the threaded pin that, inside the mincing assembly, engages the cross-shaped knife and drives it in rotation against the perforated plate: it keeps the blade aligned and transmits the drive motion while mincing the meat.

When the pin thread becomes stripped, the pin bends, or play develops between pin and knife, cutting quality drops, the blade runs poorly against the plate and overheats. In these cases the pin should be replaced to restore correct operation of the mincing group.

To fit it, remove the mincing assembly (ring nut, plate, knife) and screw on the new pin; on reassembly the knife and plate must mate without play.
