C45 steel. C45 is a carbon steel typical of flywheel blades: it holds its edge very well but, not being stainless, it must be kept sharp and protected from moisture (a light film of food-grade oil after cleaning) to prevent oxidation.
Compatibility. Flywheel slicers compatible with Berkel and Lamda, blade Ø300, 25.4 mm hole and 18.5 mm thickness.
Replacement. The blade should be replaced when, even after sharpening, its diameter is too worn down or it shows nicks on the edge. As this is a sharp component on a heavy machine, the operation must be carried out with care.
