This is the cross-shaped knife that rotates against the perforated plate to cut the meat; the self-sharpening version keeps its edge during use. It works as a pair with the plate and is a wear part: when it is worn out, the meat comes out crushed or lukewarm. Ideally it should be replaced together with the plate of the same size.
Size 8 (the smallest in the series). The same Salvador knife is also available in our catalogue for sizes 12 / 22 / 32. Wash and dry after each use.
