Turning the handwheel clockwise locks the ring nut that keeps the perforated plate and knife in position; turning it counter-clockwise loosens it for quick disassembly during cleaning and maintenance. This is the correct replacement part when the original handwheel is worn, loose, or no longer holds the ring nut firmly, causing vibration or meat leakage during grinding.
