The stainless steel gear rack (dentiera) mounts on the meat pusher arm of a slicer: the stainless steel teeth grip the product (salami, ham, roast, etc.) and hold it firmly in place during the stroke against the blade, preventing it from slipping or rotating while cutting.

It is fixed to the pusher arm with screws through the two holes at the indicated spacing. Replace this part when the teeth are worn, rounded or broken and the product tends to slip or "jump" during cutting, resulting in uneven slices.
