This is the seal fitted on the output shaft of the gearbox, the motor-reducer unit that drives the beater/agitator inside the freezing cylinder. Its purpose is to stop mix or lubricant from seeping along the rotating shaft where it passes through the gearbox housing.
When the seal wears out or hardens, the typical symptom is mix (or lubricant) dripping into the collection tray under the machine during production cycles: in that case it must be replaced to restore the seal and prevent product loss.
