The resistance is the heating element immersed in the oil tank that brings and keeps the frying fat at the set cooking temperature. In single-tank professional fryers like the L8 it is a key performance component: with intensive use the resistive filament can wear, become coated with frying residue, or fail, causing slower heating, unstable oil temperature or the fryer not working at all. In these cases the resistance must be replaced with a spare part of equal power and voltage, to restore correct heating times and frying performance.
Before replacement it is recommended to disconnect the appliance from the mains and fully empty the oil from the tank.
