This is the complete graduated knob assembly used to adjust slice thickness during cutting: turning it moves the product carriage plate closer to or further from the blade, while the graduated scale shows the thickness value set. It should be replaced when the knob turns freely without effect, the scale no longer matches the actual slice thickness, or the internal mechanism is worn and no longer holds the setting during cutting.
