The stainless steel slice deflector (parafetta) is the guard fitted next to the blade on gravity-feed slicers: its purpose is to guide the sliced product away from the disc, keeping the slices tidy as they come off the machine, while also preventing accidental contact between the operator's fingers and the cutting edge while the machine is running.

This is a safety component and should be replaced when it is bent, corroded, or when its mounting points on the slicer frame no longer hold it firmly in place: in these conditions the guard no longer protects effectively, which can affect both operator safety and the regularity of the slices.
