Silver knob for manually locking the fixed sharpener on RGV slicer mod. 22/25 (Lusso/Lady series). Lets you fasten or release the sharpener assembly for sharpening and maintenance.
The silver knob is the tightening component of the fixed sharpener fitted on RGV gravity-feed slicers, Lusso/Lady series mod. 22/25: it is hand-tightened to lock the sharpener assembly (grinding wheels and bracket) in place during use, and loosened when access to the blade is needed for cleaning or maintenance.

It should be replaced when the internal thread is worn, when the knob spins freely without tightening the sharpener assembly any more, or when it is broken or chipped: in these cases the sharpener no longer stays fixed in the set position during sharpening or slicing.
