The upper knob is the replacement part for the sharpener assembly of the model 300/350/370 S slicers. It is located on the top of the sharpener unit and is used to operate/press the grinding wheel against the blade during the sharpening operation.

It should be replaced when the original knob is broken, the thread is worn, or the control becomes stiff or stuck: in these cases blade sharpening becomes difficult or imprecise.
