The galvanized grater roller (ref. AGWSTRI0183), measuring 87x145 mm (outer diameter on the tips x length), is the perforated cylinder at the heart of professional cheese graters: spinning at high speed, its punched surface shreds and flakes hard cheese (as well as stale bread, nuts and similar foods) pressed against it. It is made of galvanized iron, a treatment that protects the metal from corrosion and the humidity typical of the working environment.

The roller should be replaced when the punched surface becomes rounded or worn down, when grating output visibly decreases, or when rust appears beneath the galvanized coating: a worn roller produces coarser, more irregular grated cheese with more friction-related overheating.
