It is the integrated sharpening group mounted above the blade, fitted with two grinding wheels for sharpening and deburring the edge, protected by a hinged cover that is raised or lowered via a locking knob to bring the wheels into contact with the blade.
It should be replaced when the grinding wheels are worn or glazed, when the cover no longer locks correctly in the working or rest position, or when sharpening is no longer effective and the blade loses its edge quickly during use.
