Sharpener unit for ABO slicers, Mignon model. The unit is fitted onto the slicer body and allows the circular blade to be sharpened directly on the machine, using two abrasive grinding wheels (one for rough grinding and one for finishing the cutting edge).

The sharpener should be replaced when the grinding wheels are worn, the rotation mechanism is worn out, or when it no longer guarantees an even sharpening of the blade edge, affecting cutting quality.
