The slice deflector is the part positioned right behind the blade that guides the freshly cut slice outward, helping it fall correctly onto the slice tray and preventing it from getting stuck against the blade's edge.
It should be replaced when it is bent, dented or has deformed edges: in these cases the slice no longer slides correctly and can build up against the blade, affecting cutting quality and operator safety.
