On Sirman Aries stuffers the gearbox has a galvanized steel body with tempered and ground steel gears, running on sealed bushings/bearings: the pinion is the gear that transmits motion from the gearbox to the feed shaft, i.e. the mechanism that pushes the piston downward to force the meat mixture out through the funnel during stuffing. It should be replaced when the teeth are worn or chipped, which causes play, noise or loss of thrust during operation.
