It is the deflector fitted close to the blade that guides the freshly cut slice towards the receiving plate, preventing it from sticking to the blade, while also acting as a fixed guard on the cutting exit side.

Stainless steel allows perfect cleaning and sanitising with no risk of oxidation, an essential requirement for a component that touches the food with every slice. Replace it when the original deflector is bent, dented or deeply scratched: a deformed deflector rubs against the blade, ruins the edge and tears the slices instead of guiding them, and also becomes difficult to sanitise properly.
