The 23 cm roast knife is a professional kitchen knife designed for cutting and portioning roasts and cooked meats. Its long, sharp blade slices in a single stroke, producing clean, even cuts that preserve the meat fibre and juices and reduce the shredding typical of short knives.

The 23 cm working length is the standard reference for the work bench and tableside service: long enough to cut through hams, loins, poultry and roast beef in one pass while keeping full control of the cut.
