The bulb-and-capillary safety thermostat is a thermal protection device that cuts off the electrical supply when the sensed temperature exceeds the trip threshold, preventing dangerous overheating in ovens, fryers, bain-maries and other professional equipment. The sensor (bulb), connected to the thermostat body via a capillary tube, contains a fluid that expands with heat and triggers the safety contact.
