The bulb, immersed in the frying oil, senses the temperature and acts on the electrical contact to keep the value set with the adjustment knob. Replace it when the oil temperature is no longer stable, the thermostat no longer switches the heating element on/off correctly, or the bulb/capillary shows leaks or kinks that affect its operation.
