The adjustable three-phase thermostat (ref. AGWS1.006.064) is a capillary bulb thermostat for temperature control on professional cooking equipment (ovens, fryers, hot plates), with an adjustment range of 0-300°C. It works through the thermal expansion of the liquid contained in the bulb: as temperature rises the liquid expands and transmits pressure through the capillary to the calibration mechanism, which opens or closes the electrical contact to maintain the set temperature.
