It fits onto the counter-bar, the fixed part opposite the sealing bar, and creates the airtight seal during the bag's vacuum and sealing cycle. The knurled profile increases grip and adhesion against the sealing bar, improving seal quality. Replace it when you notice air leaks during vacuum sealing, defective or uneven seals, or visible wear, permanent flattening, or scorching on the sponge.
