This fine-grit sharpening stone (emery) is the abrasive wheel fitted in the built-in sharpener of Berkel Futura and Premiere slicers (code AGWS35400112). The sharpener on these machines holds two stones: a coarse-grit wheel that restores the edge on a worn blade, and a fine-grit wheel — often called the deburring stone — that runs right after it to refine the edge and remove the wire edge (the metal burr) left by the first pass.

Correct use means a short pass of just a few seconds, running the fine stone only after sharpening with the coarse stone: a longer pass does not improve the result and risks overheating the edge, wearing down both the blade and the stone itself for no benefit. The outcome is a clean, polished, burr-free edge — essential for thin, even slices.

Replace the stone once its abrasive surface looks worn, glazed (smooth and shiny, a sign it no longer 'bites') or cracked: in these conditions sharpening loses effectiveness and the blade is no longer properly finished.
